Recipe Cold Rice Salad
Ingredients:
100 grams of rice, 1 can of tuna in oil, 1 sprig of parsley, 1 courgette, peel of 1 lemon, 1 clove of garlic, salt and extra virgin olive oil as required

Recipe:
Let's start the dish by boiling the rice in plenty of salted water and leave it aside to let it cool. In a pan pour 1 tablespoon of oil, the crushed garlic clove, the courgette previously cut into small cubes, salt to taste and cook over medium heat for about 5 minutes. Once cooked, remove from the heat and let them cool. Meanwhile in a bowl pour the already cold rice, drained tuna, finely chopped parsley, 1 tablespoon of extra virgin olive oil, grated lemon peel and chilled zucchini. We adjust the salt if necessary and at this point the rice is ready to be tasted!
