Recipe Cinnamon Cookies

Ingredients:

Cold butter 125 g, Flour 00 250 g, Sugar 100 g, Eggs (about 1 small) 50 g, Cinnamon powdered satin 1 teaspoon, Millefiori honey 15 g, Salt up to 1 pinch

Recipe:

To prepare the cinnamon biscuits, start by preparing the short pastry. In a mixer pour the flour, the chopped butter, a pinch of salt and the cinnamon. Briefly operate the blades until a sandy compound is obtained. Turn off the robot and add the sugar, the honey that will give the typical brownish note to the dough and the lightly beaten egg. Run the mixer again but at low speed, just enough time to compact the ingredients. Then turn the dough over on the work surface and quickly knead only the time necessary to shape a dough. Wrap it in plastic wrap and let it rest in the refrigerator for at least 1 hour. After the indicated time, take the cinnamon pastry again and place it on the work surface lightly sprinkled with a little flour, then beat it with a rolling pin to return it to heat and work it more easily. Sprinkle the surface with a pinch of flour and roll the dough using a rolling pin: you will need to obtain a sheet about half a centimeter thick. To create a decorative weft, then use a striped and pressed rolling pin, without too much force, on the dough going first in one direction (for convenience we started from the vertical one), and in the other so as to intersect the lines and obtain a chessboard. Now with a 6 cm diameter pastry cutter (alternatively a glass or a cup will do), make the first 20 biscuits of 27 g each; the advanced dough should be compacted quickly and then left to rest for half an hour in the fridge covered with plastic wrap, so that it is then rolled out again and the other biscuits are made. Manually, as you make the biscuits, place them on a baking tray covered with parchment paper before putting them in the oven, leave them for 15 minutes to rest in the fridge otherwise, during cooking, they will lose their shape. Cook the biscuits in a preheated static oven at 190 ° for about 20 minutes. After this time, let them cool completely on a wire rack, so they will become cool and evenly crispy. Here are your fragrant cinnamon biscuits ready!
