Recipe Eggplant Rolls

Ingredients:

600/700 grams of aubergines (choose them long enough to roll them), 200 grams of sliced smoked provola, 120 grams of speck (thinly sliced), 3/4 tablespoons of flour, 2 tablespoons of grated Parmesan, 2 tbsp of breadcrumbs, salt and peanut oil as required.

Doses for: 6-8 persone realization time: 30 minutes

Recipe:

Let's start by cleaning the aubergines, if we want we can also eliminate part of the peel using a potato peeler. Then we slice them at a thickness slightly higher than 0.5 centimeters (to be more precise we can use a slicer or a mandolin). After slicing them, to remove the bitter taste from the aubergines, we put them in a colander, using coarse salt. We put a dish on the aubergines and put a weight on it and leave it like this for about 40 minutes. Once the eggplants have eliminated the water, we shake them so as to eliminate the salt and then dry them with a cloth or with absorbent paper. As soon as the eggplants have been well dried we can fry them: we flour them so that during cooking they absorb less oil, we shake them in order to remove the excess flour. Now fry a lot of hot oil with temperatures around 180 °. We just let them color and then we turn them. Once the aubergines have browned, they will be just golden brown, we drain them: first we put them in a colander, so as to remove the excess oil and then we dry them again with the absorbent paper. When the aubergine slices are completely cooled, we can prepare the rolls: first prepare the pan that we lightly grease with a little oil and sprinkle it with some breadcrumbs. We shake it and eliminate the excess. Arrange the aubergine slices on a work surface and place the speck slices on top and then add the cheese. At this point we can close the aubergine with a roll. Then we wrap it around ourselves, but without squeezing too much. Now lay the rolls in the pan: it is important to place the open part down, so that during cooking the rolls do not disintegrate. We complete the rolls with a light sprinkling of breadcrumbs if we want to give crunchiness and grated Parmesan and a drizzle of oil. Then cook in the oven at a temperature of 200 °, for about 15/20 minutes. As soon as they are removed from the oven, the rolls must have a nice golden crust. Let it cool down for a couple of minutes and serve them.
