Recipe Ricotta Ravioli

Ingredients:

FOR THE BROWSE: 2 eggs, 4 tablespoons of durum wheat flour, 4 tablespoons of flour 00.1 tablespoon of oil, 1 pinch of salt. FOR THE FILLING: 1/2 kilo of ricotta, 2 eggs, 2 tablespoons of grated bread, 200 grams of Parmesan, a pinch of cinnamon.

Doses for: 4 persone realization time: 30 minutes

Recipe:

We prepare the pastry. Break the eggs and put them in the food processor, add the salt, the oil, the semolina flour and the 00 flour, knead everything for a few minutes, then take the dough and work it with your hands to soften it. Then we cut it into small pieces and pass it a couple of times with the crank machine until we get a thin and homogeneous sheet. To prepare the filling: in a bowl we break the eggs, add the ricotta, add the salt, the cinnamon, the Parmesan and the breadcrumbs, mix everything well, until you obtain a homogeneous mixture. Now let's get ready to prepare the ravioli: now on the dough we put some balls of stuffed filling, we cover with other dough and we give the ravioli shape with the hands closing the edges well, we cut with a wheel and we get our stuffed ravioli. We just have to cook them in boiling water and prepare a nice sauce to dress them!
