Recipe Chicken With Sweet Pepper

Ingredients:

1 chicken of about 1 kilo, 2 peppers (one yellow and one red of about 300 grams each), 3 ripe tomatoes, 5 sprigs of fresh oregano as required, 1 large onion, 2-3 tablespoons of flour, salt, pepper and oil extra virgin olive oil as required

Recipe:

We begin to prepare the dish starting with cutting the chicken into small pieces, then season it with salt and pepper to taste and flour it with a sprinkling of flour. Let's take a pan, add a little oil and let it heat up, then pour the chicken and let it brown on all sides for a few minutes on a high flame. Once browned, remove from the heat and transfer it to a baking dish to bake at 180 degrees for about 20 minutes. Meanwhile we begin to clean the peppers, remove the seeds and white filaments and cut them first in half and then in sticks. At this point let's chop the onion and then the tomatoes, which we will cut into 4 parts, remove the seeds and reduce them into fillets. In the same pan in which we cooked the oil, pour the chopped onion and let it just brown, add the peppers and season with salt and pepper and let it brown for about two minutes. At this point we turn off and add the tomatoes and oregano; wet the chicken we just removed from the oven with a little white wine and pour the peppers over it. Now we cover everything with aluminum and bake again to finish cooking. After about 20 minutes the chicken is ready to be served!
