Recipe Vegetarian Paella

Ingredients:

230 grams of snow peas or flatbread, 220 grams of carrots, 250 grams of red peppers, 200 grams of cauliflower, 220 grams of mushrooms, 200 grams of boiled white beans, 1 spring onion, 2 tablespoons of chopped parsley, 1 clove of 'garlic, 200 grams of peas, 300 grams of artichoke hearts, 300 grams of tomato sauce, 2 sachets of saffron, 30 grams of paprika, extra virgin olive oil, enough, 2 liters of vegetable broth, 600 grams of arborio rice

Doses for: 8 persone realization time: 45 minutes

Recipe:

Pour oil into a non-stick pan. When it has warmed up, add a clove of garlic cut in two, the chopped spring onion, 1 glass of broth, a pinch of salt and cook for a few minutes until the spring onion has softened. Remove the garlic. Add the most coriaceous vegetables: carrots, peppers and jackdaws. Cook adding broth if necessary. When the vegetables are soft, add the artichoke hearts and the mushrooms. Continue cooking adding vegetable stock when needed. Finally, add the cauliflower, peas and boiled white Spanish beans. Add the vegetable stock and cook for about ten minutes. At this point add the puree, the remaining vegetable stock, the saffron previously dissolved in a little vegetable stock and the paprika. Mix well and adjust salt if necessary. Then add the rice, stir and cook the first 7-8 minutes on high heat, then lower the heat and cook for another 10 minutes. Sprinkle with chopped fresh parsley and serve.
