The whole bakery is essentially composed of 4 elements: FLOURS, DAIRY, EGGS, SUGARS. From these elements processed in variable proportions, with different techniques, according to their qualities, cooked in different ways and with the addition of garnishes such as cocoa, chocolate, fruit, jam, ect, you get all the pastry products. Pastries are made from the preparation of basic dough such as the classic sponge cake, or assembled such as in the diplomatic cake (puff pastry, sponge cake, custard, alchermes liqueur, aromatic rum, icing sugar). We divide the preparations into: whipped dough, basic dough, risen dough made with baking powder, brewer's yeast and creams.
