Recipe Catalan Cream

Ingredients:

1/2 liter of whole milk, 4 egg yolks, cinnamon, 100 grams of sugar, cinnamon, 20 grams of corn starch, orange peel, cane sugar.

Doses for: 4 persone realization time: 20 minutes

Recipe:

To start, pour half a liter of whole milk into a saucepan and bring to a boil, add half an orange peel to large pieces and a piece of cinnamon stick. We then proceed to separate the egg yolks and add the sugar, mix well then we also put the cornstarch until obtaining a homogeneous cream. It is now added the not very warm milk and we turn well. Now put the mixture on a low heat and stir continuously. When the cream has thickened, we pour it into single-serving containers and place them in the fridge for about an hour. When the cream has cooled we proceed to caramelize. We sprinkle each portion with brown sugar and pass over the fire with a gas torch. It is advisable to serve immediately the cream which thus retains the very pleasant warm / cold effect.
