Recipe Seafood Risotto

Ingredients:

2 grams of mixed shrimp, half kg of mussels, 1 kg of clams, half kg of baby octopus, cuttlefish and squid, rice, chili pepper, garlic, parsley, olive oil, fish broth, 1 glass of white wine, salt and pepper q. B.

Doses for: 6 persone realization time: 30 minutes

Recipe:

To prepare this dish we start to boil and shell mussels and clams. A part of clams we leave it whole in the cooking water, the other we break it. Proceed by chopping 3 cloves of garlic well. Put a saucepan on the heat and when it is hot, add the olive oil to heat, then add the garlic and 2 chopped chillies. Brown it being careful that the garlic does not burn. Then we can add the fish cut into pieces that are not too small; let's start with the octopus, which are the hardest, then the cuttlefish, turning the whole well, then the squid. Continue to cook for about 10 minutes. Finally add the prawns, then mussels and clams and lower the heat. Add some fish stock, mix and cover, and turn off the heat. Now it's time to prepare rice. In a saucepan with oil and chopped browned garlic we throw the rice, let it toast over high heat and then water it with a glass of white wine. Then add the hot fish broth a little at a time, lower the heat and stir frequently. When the rice is half cooked, add the prepared fish sauce and the chopped parsley. It is brought to the end of cooking and is ready!
