Recipe Ice Cream Cookies

Ingredients:

3 egg whites whipped, 500 g of whipping cream, 4 tablespoons of sugar, a cup of coffee, three egg yolks, biscuits.

Doses for: 16 persone realization time: 20 minutes

Recipe:

First we take a bowl, pour the cream which must be cold, for better results, with an electric whisk we mount it until stiff. Then divide the yolks from the whites of the 3 eggs. We also whisk the egg whites with the same electric whisk. Let's move on to the reds of the egg to which we add the 4 tablespoons of shaved sugar, turn well and pour the cup of not hot coffee. Then we pour the eggs on the cream and we incorporate well, then also the clear to snow, mixing everything with a movement from the bottom to the top to not remove the cream. At this point we use an aluminum pan where we place the biscuits (like Saiwa Gold) in regular rows. Then pour the cream over it, spread it carefully and then cover it with other rows of biscuits. Put the pan in the freezer for at least 4 hours, or about 3 hours so you can cut the cookies with ice cream into individual portions. And then put away again in the freezer.
