Recipe Neapolitan Paccheri

Ingredients:

400 grams of paccheri, 800 grams of peeled tomatoes, 100 grams of lard, 50 ml of extra virgin olive oil, 1 onion, 1 small carrot, 1 stick of celery, 5 basil leaves, grated parmesan, salt and pepper as much that's enough

Doses for: 4 persone realization time: 50 minutes

Recipe:

Let's start the dish by preparing the beat: put the celery, carrot, onion in the mixer and whisk everything; later we add the lard and give another smoothie. At this point in a pan put a little oil, add the sauté and brown over high heat for a couple of minutes. Now we can add the peeled blended tomato, the basil leaves and salt to taste, let it cook over medium-low heat with a half-closed lid for about 40 minutes or at least until the sauce shrinks well. In the meantime we begin to cook the paccheri in another pan with plenty of salted water and one minute before the total cooking, drain the pasta and pour it into the sauce pan, mixing everything with a ladleful of cooking water. Add Parmesan and pepper to your taste and the dish is ready to be served!
