Recipe Salad With Avocado

Ingredients:

INGREDIENTS FOR SALAD Rocket 80 grams, Ripe Avocado 1, Cherry tomatoes 200 grams, Pumpkin seeds 20 grams, Taggiasca olives 50 grams FOR CITRONETTE Lemon juice 1, Fresh chilli 2, Extra virgin olive oil 40 grams, Salt up just enough, black pepper (optional) as required

Recipe:

To prepare the avocado salad, you can start by draining the Taggiasca olives from the preserving oil, then prepare the citronette: take the fresh peppers (if you prefer you can use kitchen gloves, otherwise remember to wash the hands after having cleaned and sliced them, in order not to risk irritating you), remove the stalk and open them to eliminate the internal seeds. Then slice them finely. Squeeze the juice of 1 lemon, then strain it and pour it into a jar (you can also emulsify the citronette in a small bowl using a hand whisk or a fork). Pour 1 pinch of salt, pepper (optional) and fresh chilli then add the extra virgin olive oil. Close and shake the jar so that the mixture is emulsified and your citronette is ready, pour it into a bowl where you will season the salad. Wash and dry well the datterini and rocket tomatoes, then divide the datterini in half lengthwise; then cut in half and peel the avocado (if very ripe you can take the pulp with a spoon), reduce the pulp into cubes. Now, pour the taggiasche olives, the avocado into the bowl in which you had placed the citronette and mix thoroughly so that the avocado does not oxidize thanks to the dressing with citronette. Add also the datterino tomatoes then the rocket and finally the crunchy note: the pumpkin seeds; mix well and your avocado salad is ready to be enjoyed!
