Recipe Chicken Salad

Ingredients:

Chicken breast in fillets 600 g, Pitted green olives 30 g, Pickled gherkins 60 g, Red peppers 200 g, White celery 170 g, Carrots 150 g, Gruyere (or Edamer) 100 g, Salt until just enough INGREDIENTS FOR SEASONING Pepper black as required, delicate mustard 15 g, salt to taste, white wine vinegar 20 g, extra virgin olive oil 100 g, mayonnaise 120 g

Recipe:

To prepare the tasty chicken salad, start by beating the chicken slices with a meat pounder, do it between two sheets of parchment paper so you will crush the meat without tearing it. Then cook on a hot grill and turn only when the meat is completely white and present the typical streaks of the grill. Then turn and add a pinch of salt on the cooked part. Meanwhile cook the other part for the same time. It will take about two minutes but the time may vary depending on the thickness. Don't prick the meat with the prongs of the fork otherwise the liquids will come out and the chicken will be too dry. When the meat is well cooked, remove it from the grill and add salt immediately, so the heat will melt the salt. Put the chicken slices on a plate and let it cool. In the meantime, clean the vegetables: take the pepper and remove the internal seeds, then julienne the flaps, peel and chop the carrots, then reduce them into strips. Then reduce the ribs of celery, gherkins and pitted green olives into slices. And finally, cut the cheese (Gruyere or Edamer) into sticks. Meanwhile, the meat will have cooled, cut it into strips, then take care of the sauce that will serve as a salad dressing: place the mayonnaise in a bowl, then add the mustard, white wine vinegar, salt and pepper. Finally, pour in olive oil to emulsify. Stir and set aside. Now take a large bowl, pour the chicken and all the previously cut vegetables: the peppers, celery, carrots, cucumbers, cheese, olives and give a first stir and then season with the sauce, stir and cover with plastic wrap transparent; let it rest in the refrigerator for at least an hour. After this time the flavors will be well blended and you can enjoy your tasty chicken salad.
