Recipe Pasta Alla Boscaiola

Ingredients:

400 grams of tortiglioni or short pasta; 300 grams of mixed mushrooms, 4 knots of sausage, half an onion, 3 tablespoons of extra virgin olive oil, 1 sprig of parsley, salt and chilli pepper as required

Doses for: 4 persone realization time: 30 minutes

Recipe:

Heat the oil in the pan. Finely slice the onion and add it to the oil to stew it. Remove the sausage from the gut and add it to the pan. Coarsely slice the mushrooms and add them to the pan with the sausage. Finely chop the parsley and add it to the pan. Add salt to the sausage flavor and add chilli to taste. Cover for a few minutes. Meanwhile, salt the pasta water and add the pasta. With the help of a ladle, pour a little cooking water into the pan to create a sauce. Drain the pasta in advance directly into the pan and add a little more cooking water if necessary. Stir to mix the pasta with the ingredients of the sauce and finish cooking the pasta in the pan until the water is absorbed. Serve with a sprinkling of parsley.
