Recipe Sorrentine Gnocchi

Ingredients:

400 grams of gnocchi, 300 grams of tomato puree, 200 grams of mozzarella, 40 grams of grated Parmesan, extra virgin olive oil, half onion, 4-5 basil leaves, salt to taste.

Doses for: 2 persone realization time: 35 minutes

Recipe:

We begin to prepare the sauce by lightly frying the thinly sliced onion in a pan with 2-3 tablespoons of oil over high heat. Add the tomato puree, add salt and add a few leaves of basil; let the sauce cook for about 12-14 minutes on a low flame. At this point we boil the dumplings in abundant salted water and as soon as they come to the surface we take them with a slotted spoon. Pour the gnocchi directly into the pan with the sauce and mix well with the sauce. Meanwhile preheat the oven to 190 degrees. Pour half of the gnocchi into a baking dish, add half of the diced mozzarella and two tablespoons of grated Parmesan and then cover with the other gnocchi and finish with the remaining mozzarella cubes and plenty of Parmesan. Now cook the gnocchi alla sorrentina in the hot oven in ventilated mode for about 12-14 minutes. Once baked they are ready to be served.
