Recipe Sicilian PaccheriIngredients:Paccheri, 1 bottle of tomato puree, basil, 1 clove of garlic, 250 gr ricotta, 1 mozzarella, 1 pound of cooked ham, 2 grams of ground, 1/2 ounce of flaked Parmesan, 1 eggplant. Oil, Salt and pepper to taste Recipe: This dish requires several separate steps. Prepare the sauce with the puree by frying the garlic and cook for about 20 minutes. Cut the aubergine into thin slices and leave it 15 minutes in water and salt to make it lose its bitterness. Prepare a mixture with the minced and part of the Parmesan and make small meatballs. Dry the aubergine slices and flour them. Then make a single fry with aubergines and meatballs. Cut mozzarella and ham and make a dough. Then make a cream with ricotta and a few tablespoons of the sauce already prepared. After having cooked and drained the paccheri, put some sauce in a baking pan and spread some paccheri on top, add more sauce, then make layers with the eggplant first, with the ricotta, then the meatballs then the mozzarella and ham. Last layer of paccheri and sauce, parmesan and basil. Bake at 180 degrees for about 20/25 minutes.
