Recipe Halloween Shortbread Cookies

Ingredients:

For the pastry: 250 grams of flour, 150 grams of butter, 100 grams of sugar, 3 egg yolks, a pinch of salt, grated lemon or orange peel. For the finish: cherry jam or strawberries as required, icing sugar

Recipe:

We start by placing the flour on the work surface, incorporating the butter and working the ingredients. Add a pinch of salt, sugar and lemon peel or grated orange and work well. We combine the 3 egg yolks and knead quickly. Lay the dough on a sheet of parchment paper and lightly crush it so that it flattens a little. Close it with a sheet of parchment paper and put it in the fridge for 40 minutes. After 40 minutes, we take out the dough and work it again with your hands. Place it on parchment paper and begin to roll it out with a rolling pin to a thickness of about 3 mm. So let's take the coppapasta of the shape we prefer, if we don't have it then a glass cup that turns upside-down makes it very well cut:) We remove the excess dough and place the biscuits on a baking sheet to make the eyes and the mouth. We can use a smooth pastry nozzle or a small knife. We make only half of the biscuits and cook together with the other whole ones in a ventilated oven at 160 degrees for about 20 minutes. Once pulled out, let them cool and stuff them with the jam that we prefer by combining the intact part with the perforated part. We finish by sprinkling them with icing sugar.
