Recipe Scallops With Marsala

Ingredients:

Pork loin (8 slices) 400 g, Marsala 100 g, Vegetable broth 70 g, Butter 50 g, Extra virgin olive oil 40 g Flour 00 as required, Salt to taste, Black pepper to taste

Recipe:

To prepare the scallops with marsala, first place the slices of meat between two sheets of parchment paper and beat them with a meat tenderizer so as to crush and stretch them at the same time until they are very thin: in this way the meat will be more tender and less fibrous. Flour the slices and remove the excess flour. When all the slices are floured, you can go to the stove: in a large pan, gently melt the butter together with the oil, then slightly raise the heat and add the floured slices. After a couple of minutes turn them with a kitchen tongs and scald them for a few moments on the other side, then raise the heat and add the marsala. Add salt and pepper. At this point pour the vegetable stock (or water, as an alternative) and continue to cook for a few minutes, swinging the pan from time to time to create a delicious emulsion. When the cooking juices have become creamy, serve and serve your tasty marsala scallops!
