Recipe Gnocchi Alla Romana

Ingredients:

1 l of milk, 250 g of semolina, 130 g of butter, 2 egg yolks, 120 g of Parmesan cheese, salt and pepper.

Doses for: 2 persone realization time: 2 hours and -20 minutes

Recipe:

We start by pouring the milk and 50 g of butter into a large saucepan and season with salt and if you prefer nutmeg. We melt the butter and bring the milk to a boil. Once it has reached the right temperature, add the semolina and stir continuously with a whisk until it has thickened, it will take a few minutes. Turn off the heat and add the egg yolks, incorporating them thoroughly, stirring constantly with the whisk. Add 50 grams of Parmesan and our mixture is ready to be spread. Cover a baking sheet with parchment paper and bring the hot dough, using a spatula, to the same thickness (about 1 cm). Let it rest and cool for 30/40 minutes. We butter after the pan where we are going to put the dumplings and with a pastry cutter instead we cut out the dough forms that we will position immediately. Let us pass over melted butter and cheese and, if we like, white pepper. Bake in a static oven at 200 degrees for 15/20 minutes. Once golden, let's churn out and enjoy! Enjoy your meal!
