Ingredients:

200 grams of shelled almonds, 200 grams of flour 00,200 grams of corn flour, 100 grams of lard, 100 grams of softened butter, 2 egg yolks, half a teaspoon of vanilla flavoring, 200 grams of sugar, the zest of 1 lemon, 1 pinch of salt, butter enough (to grease the pan).

With the help of a chopper, chop the almonds roughly and pour them into a large bowl. Add the two flours (00 flour and corn flour) and mix. Add the two egg yolks, sugar, vanilla flavoring and lemon zest. Add 1 pinch of salt and mix. At this point, add the lard and the butter - the latter slightly softened and added to pieces. Mix with your hands in the cup and when the mixture begins to mix, transfer it to a pastry board. Continue to work until the ingredients are homogeneous but being careful not to mix them too much. Grease a 26 cm diameter baking sheet with butter and transfer the sbrisolona mixture, making sure it is evenly distributed. Bake in static oven at 180 degrees for 45 minutes. Before serving the sbrisolona, let it cool in the oven itself, but open and off.
