Recipe Peaches Small Sweet Pastry Biscuit


Ingredients for the dough:
110g flour
6 eggs
60g sugar

Ingredients for the topping and assembly:
60g of dark chocolate
30g milk chocolate
Water and sugar


1) Whisk the egg whites with 10g sugar; 2) Beat the egg yolks with 50g sugar until the "tape"; 3) Add the flour to the yolks, mix quickly with a whisk; 4) Fold the egg whites in the mixture of egg yolks and flour and mix gently with your hands; 5) Put the dough finished in a pastry bag, roll into balls the size of a walnut and bake in preheated oven at 150 degrees for 10 minutes; 6) In the meantime, melt in a bain-marie 60g of dark chocolate with 30g of milk chocolate; 7) Allow to cool then add 2 biscuits cookies with melted chocolate and let dry
(Proceed until all biscuits); 8) After at least an hour (the drying time depends on the season), pass peschine inside the emulsion Alkermes, water and sugar (the amount depends on subjective tastes, approximately one glass of Alkermes, half a glass of water and 2 tablespoons of sugar).
9) In a cup deep enough to put sugar (which must be renewed depending on the cleaning) and with a fork to roll the peschine one at a time to cover them with sugar. 10) At the end put in the fridge for a couple of hours at least.
