Recipe Ravioli With Ricotta

Ingredients:

FOR THE BROWSE: 2 eggs, 4 tablespoons of durum wheat flour, 4 tablespoons of flour 00.1 tablespoon of oil, 1 pinch of salt. FOR THE FILLING: 1/2 kg of ricotta, 2 eggs, 2 tablespoons of grated bread, 200 g of Parmesan, a pinch of cinnamon.

Recipe:

To make ricotta ravioli, let's start with the preparation of the pastry. Break the eggs and pour them into a bowl, adding a pinch of salt, two tablespoons of olive oil, the semolina flour and the 00 flour. Knead for a few minutes (also using a food processor). Once the dough is ready, we work it with your hands to soften it a bit, divide it into equal parts and pull the dough into a cranked pasta machine until we get a thin and homogeneous sheet. Prepare the filling: add the eggs to the ricotta, a pinch of salt, the cinnamon, the Parmesan, the breadcrumbs and mix well until you obtain a homogeneous mixture. We then put the filling on a part of the dough forming small spheres and cover with the other part of the pastry. We close the edges well and remove the excess dough with a pasta cutter. At this point we can cut our ravioli that will be ready to be cooked as you prefer.
