Recipe Puff Pastry Roll With Aubergines And Fontina

Ingredients:

1 roll of puff pastry, aubergines, slices of bacon, grated pecorino, slices of fontina cheese, nutmeg, 1 egg, salt, extra virgin olive oil, white pepper.

Recipe:

To prepare this pact we begin to peel the aubergines, cut them into cubes and boil them in salted water for about 5 minutes. In a bowl, add the egg, parmesan, a pinch of salt, grated nutmeg, extra virgin olive oil and freshly ground white pepper to the eggplant previously cooked. Mix the dough. Then prepare the puff pastry on the baking paper and distribute the slices of bacon in the central part, then the slices of fontina, then the mixture of eggplant. Arrange well and wrap it in the puff pastry, being careful to close the top flap well and twist the side edges, like candy. Then place the roll with the baking paper in a baking dish. Bake in preheated oven for about 40 min. Allow to cool and serve on the table.
