Ingredients:

500 gr of flour 00 50 g of lard 25 g yeast 1 egg 1 teaspoon of vanilla extract 50 g sugar vegetable oil 1 pinch salt caster sugar for garnish

Recipe:

Put the flour on a pastry board, make a hole in the center where riporrete lard at room temperature. Mix with 50 grams of sugar, vanilla, crumbled yeast and 2.5 dl of lukewarm water with your hands by dissolving the yeast. Knead with hands, add a pinch of salt and continue to knead. As soon as the dough will be smooth in a bowl, whisk an egg with a fork and pour it on the mixture. Continue to knead vigorously, pour a little 'warm water (about a cup of coffee) to obtain a kind of solid batter and continue to knead with your hands. Take the pallette of dough (the size of a tennis ball) and place them on a baking sheet by covering them with a blanket and a clean cloth for about 30 minutes letting it rise. After the indicated time take the balls and, with the hands, creating a bead of paste, place it on a baking horseshoe so that the two ends cling. If the dough becomes too sticky hands greased with olive oil. In a pan with high sides to warm hearty vegetable oil or lard, if you prefer, and the curly fry on both sides. As soon as the clips are golden brown remove from pan and place them on a platter lined with paper towels. When they are still warm to spend the staples in granulated sugar and serve.
