Recipe Gnocchi Alla Romana

Ingredients:

1 liter of milk, 100 grams of butter, nutmeg, 100 grams of parmesan, 40 grams of pecorino romano, salt, 250 gr of semolina, 2 egg yolks

Recipe:

The preparation of this dish begins by heating the milk with butter, grated nutmeg and salt. Turn with a whisk to melt the butter. The milk will certainly be hot and then pour in the semolina, continuing to turn so that it does not clot making it cook for about 2 minutes. The dough should be soft and creamy. Remove from the heat, add 2 egg yolks and the Parmesan, stirring well with a wooden spoon. So let's make 2 rolls with the hot dough maybe helping us with baking paper that we will carefully close. The rolls should now be cooled, better in the fridge for 15/20 minutes. Then we cut them into slices with a wet knife. We then arrange the slices in a pan, pour in melted butter and grated pecorino romano. Put in a preheated oven at 200 ° for 10 minutes, then at 240 ° for 2/3 minutes in grill function and the Roman-style gnocchi are ready.
