Recipe Skewers Of Mozzarella And Anchovies
Ingredients:
400 grams of mozzarella (for pizza), 3 slices of long bread for sandwiches, 120 grams of anchovies in oil, 200 grams of whole milk, 3 medium eggs, breadcrumbs and peanut oil for frying as required

Recipe:
To prepare the mozzarella and fried anchovy skewers, start by slicing the mozzarella for pizza. Then drain the anchovies in oil. So we take a slice of long sandwich bread, lay the mozzarella slices and trim them to have an even layer. Arrange anchovy fillets and cover with another slice of bread. We continue with mozzarella slices and anchovy fillets. We close with another slice of bread. Now we can skew the shorter side with 4 skewers and make the first 4 skewers: we continue like this until we finish the whole thing. We pass the skewers first in milk, then in beaten eggs and finally in breadcrumbs. We proceed to the double breading by dipping once again the skewers already breaded first in the eggs and then in the breadcrumbs. In a pan heat the peanut oil to a temperature of 150 °. We fry a few pieces at a time so as not to overheat the oil. We drain when they are golden brown: it will take a few minutes. Lay them on absorbent paper to remove excess oil and serve our hot mozzarella and fried anchovies skewers!
