Recipe Sicilian Cannoli

Ingredients:

For the dough: 300 gr of flour 00.30 gr of icing sugar, 1 pinch of salt, 25 gr of butter, 1 egg, 150 ml of marsala. For the cream: 1 kg of ricotta, 300 g of icing sugar, 2 g of vanillin, 200 g of dark chocolate, 50 ml of rum

Doses for: 4 persone realization time: 25 minutes

Recipe:

We start by placing the flour, icing sugar, salt, butter, egg, marsala in a large bowl and mix with your hands. If the dough is very soft, add a little flour until it becomes firm. We then spread on a work surface dusted with flour and go to make circles with a diameter of 10 cm and a thickness of about 1-2 mm. Using the special accessory, we then go to fold the dough brushed by the egg white. In the meantime we have warmed the seed oil that we will use for frying well. To see if the temperature is the right one we can try dipping a small piece of pasta. If it is ready, then dip our cannoli and leave them until they are golden. Meanwhile prepare the cream by placing the ricotta in a bowl, the sifted icing sugar, the vanillin, the dark chocolate, the rum and mix well. We can now fill our cannoli with a syringe or a pastry bag. If we prefer we can also decorate them with candied cherries.
