Ingredients:

1 liter of chicken broth, 4 eggs, 4 tablespoons of grated Parmesan cheese, grated nutmeg, salt, pepper, lemon peel, all that is needed.

Doses for: 4 persone realization time: 10 minutes

Recipe:

For the soup, start by preparing the chicken broth, which you will then filter to avoid any particular impurities. Put the broth back in a saucepan that you will put on the fire to boil. Proceed preparing the stracciatella: shell at least 3 eggs and beat them, then stir in the Parmesan and season with a grating of nutmeg, a pinch of salt, freshly ground black pepper and continue stirring. Add the grated lemon rind to the beaten eggs. When the broth comes to a boil, pour in the egg mixture that you will break by mixing with a whisk or fork. One minute will be enough to cook the egg. Serve the soup of paradise still boiling!
