Ingredients:

400 grams of carrots, 1 celery, 200 grams of pitted green olives, 1 red onion, 5 tablespoons of extra virgin olive oil, 1 tablespoon of white vinegar, salt.

Recipe:

We start by cleaning the tropea onion or, failing that, a red onion and slice it finely, then put it in a bowl full of water and add a splash of lemon. Let's keep it aside and move on to slice the celery, taking the softer ribs. Then we pass to the carrot that we have cleaned and kept in a bath and we also slice them finely. Add them to the celery and then take the quantity we need from the onion and dry it. We combine the latter with celery and carrots and then add the olives, oil, vinegar and salt. We mix very well and enjoy. Enjoy your meal!
