Recipe Fennel And Orange Salad

Ingredients:

2 oranges, 2 fennels, 2-3 tablespoons of black olives, salt, black pepper, extra virgin olive oil. Variations: pine nuts, sultanas, tropea onion.

Recipe:

We start by cleaning the fennel well, eliminating all the external and damaged parts. Cut them in half and then finely slice them. Let's put them in a bowl with ice and water and in the meantime let's go to oranges. We remove all the peel with a knife, including the white part. We then cut out each clove by dropping it into a bowl together with its own juice. Then we squeeze the inside before putting it away. Then drain the fennel, season with salt and pepper and sprinkle them with the orange juice. Mix, add the oil and let it rest for 10 minutes so that they are well seasoned. We also season the oranges with salt and pepper and mix them gently, being careful not to break them. Then add the olives to the fennel and decide whether to mix everything together or to assemble the salad directly on the plate. Our salad is ready to be enjoyed! Enjoy your meal!
