Recipe Pasta With Roasted Cherry Tomatoes And Pancetta

Ingredients:

400 g of homemade pasta, 500 g of roasted cherry tomatoes, 150 g of stretched bacon, 80 g of grated Parmesan, 2 cloves of garlic, 1 sprig of fresh oregano, 1 pinch of dried oregano, 2 tablespoons of oil extra virgin olive oil, salt to taste

Recipe:

We start preparing the pasta by placing the cherry tomatoes on parchment paper and letting them cook in the oven at 120 ° for at least two hours. We then put some oil in a pan and let it warm up. Meanwhile, we can cut the bacon into not very small cubes and put it in hot oil. Once ready, drain it and put two cloves of poached garlic in the same pan. We take the previously roasted tomatoes and put them in the pan, crushing them lightly and cooking them for about 5/10 minutes. We can pour the pasta into boiling water. Drain the pasta about 2 minutes before and add it to the pan. Now we can add the pancetta and mix. Our first course is ready to be enjoyed.
