Recipe Lemon Bars

Ingredients:

80 grams of flour, 80 grams of self-raising flour, 115 grams of icing sugar, 1 pinch of salt, 150 grams of butter, 1 egg. For the lemon cream: 3 eggs, 170 grams of sugar, 1 tablespoon of grated lemon rind, 180 ml of lemon juice, 115 grams of butter.

Recipe:

Start by preparing a kind of pasta briseè: for the dough, add the flour, butter, icing sugar, egg and salt and knead it all together with a dash of water, about 3 tablespoons. Do not work the dough too much or it will become elastic. Flatten the dough, wrap it in parchment paper and place it in the freezer for about an hour and a half or until it solidifies well. After this time, take them out of the freezer and knead again for a few seconds to restore their plasticity; at this point take a baking dish greased with butter and after laying the briseè put it back in the pan itself. Press the dough into the pan pressing with the fingertips against the edges. Remove excess dough. Prick the bottom of the pastry with a fork Meanwhile, heat the oven to 200 ° C. Bake for about 30 minutes or until lightly browned. Allow to cool for 15 minutes. For the lemon cream, place a pan with some water on the heat and bring to the boil. Put a bowl over the pot with boiling water and beat the eggs together with the sugar for about 2 minutes, then incorporate the lemon peel, juice and butter (optional). Stir constantly with a whisk for about 8 minutes or until the mixture begins to thicken. Remove from heat and cover with cling film. Take the base again, remove it from the mold and place it on a work surface. Put a sheet of parchment paper in the mold and place the base of the briseè. Spread the lemon cream over the still warm base and let it cool for 30 minutes at room temperature. Cover with plastic wrap and refrigerate for at least 2 hours or in the freezer for an hour. At this point remove everything from the pan with the help of the baking paper and cut the cake into rectangles (like the bars). Now they are ready to be tasted!
