Recipe Ricotta And Black Cherry Bavarian

Ingredients:

20 g of isinglass, 270 g of milk, 130 g of granulated sugar, 230 g of ricotta, 20 g of egg yolks, 330 g of whipping cream, 3 cl of brandy, 150 g of sour cherries in syrup.

Doses for: 4 persone realization time: 3 hours and 0 minutes

Recipe:

We start by placing the isinglass in cold water for 10 minutes. Heat the milk and add 100 grams of sugar. We mix and then melt the glue in the milk and let it cool. Then add the ricotta and egg yolks and mix with a whisk. Separately, whip the cream with 30 grams of granulated sugar and then add it to the mixture, adding 3 cl of brandy and the cherries in syrup. We mix everything well and then put it in the portions that we will leave to harden in the fridge for a few hours. Once ready, we pull out, empty into a dessert plate and garnish with some black cherry.
