Recipe Cold Potato Salads

Ingredients:

RICH VEGETABLE: 500 grams of boiled potatoes, 2 tomatoes, 300 grams of pickled pickled vegetables, 200 grams of artichokes in oil, 100 grams of green olives, 1/2 red onion, salt, extra virgin olive oil and whole vinegar enough. MEXICAN MAIS AND BEANS: 500 grams of boiled potatoes, 300 grams of red cannellini beans, 200 grams of corn, 1/2 white onion, salt, extra virgin olive oil and vinegar to taste. RUSSIA: 500 grams of boiled potatoes, 300 grams of peas, 300 grams of carrots, 2 tablespoons of mayonnaise, 4 boiled eggs, salt and pepper to taste. TUNA: 500 grams of boiled potatoes, 300 grams of tuna in oil or natural, 1 cucumber, 1 sprig of parsley, salt, extra virgin olive oil and vinegar to taste. CHICKEN AND ZUCCHINI: 500 grams of boiled potatoes, 2 courgettes, 2 slices of chicken breast alternatively turkey, salt, extra virgin olive oil and thyme.

Doses for: 4 persone realization time: 30 minutes

Recipe:

RICH VEGETABLE SALAD: we boil the potatoes, when they are cold we peel them and cut them into pieces in a bowl. Add the two tomatoes cut into pieces, add the pickled pickled vegetables, the artichokes in oil and the pitted green olives. Cut thin red onion into small slices, add a pinch of salt, extra virgin olive oil and vinegar to taste. Mix well and the rich vegetable salad is ready! MEXICAN SALAD MAIS AND BEANS: in a bowl, cut the boiled potatoes into pieces, add the red cannellini beans, corn and half a white onion cut into slices. Add the salt, extra virgin olive oil and vinegar, all to your taste and mix well. Alternatively, for a typical Mexican taste we can dress with guacamole sauce and add Jalapeno peppers. RUSSIAN SALAD: in a bowl, cut the boiled potatoes into pieces, add the peas, previously boiled, the boiled carrots, two tablespoons of mayonnaise and mix well. Finally we also add the hard-boiled eggs cut into wedges. To taste we add a pinch of salt and a sprinkling of black pepper. SALAD WITH TUNA: cut the boiled potatoes into pieces in a bowl, pour the chopped tuna and remove some of the oil, then clean and cut a cucumber into thin slices and chop some parsley. We season to taste with a little salt, extra virgin olive oil and vinegar and mix all the ingredients well. CHICKEN AND ZUCCHINE SALAD: cut the boiled potatoes into pieces and put them in a bowl, then cut the zucchini into slices and grill them. We also grill the slices of chicken breast and cut everything into pieces. Add them to the bowl with the potatoes and season to taste with salt, extra virgin olive oil and thyme.
