Recipe Zucchini With Scapece
Ingredients:
1 kg of courgettes, 1 bunch of mint, 2-3 cloves of garlic, extra virgin olive oil, white wine vinegar, salt, pepper

Recipe:
Let's start by washing the courgettes well and cutting them into slices. Then put them in a colander and sprinkle them with salt so that all the vegetation water is eliminated. Leave them for 1 hour and then gently squeeze them with your hands and lay them on a cloth and dab at them well. After this procedure, we can start frying them in abundant boiling oil and then season them with a little salt, sliced garlic, pepper, chopped mint, a drizzle of oil and plenty of vinegar. Transfer them to a bowl, mix them well and then cover them with plastic wrap and let them rest for at least 2 hours before consuming them. Enjoy your meal!
