Recipe Reggio Emilia Rice CakeIngredients:1,500 ml of milk, 200 gr.of rice, 200 gr.of sugar, 5 egg yolks, 3 egg whites, a vanilla bean, zest of a lemon, a pinch of salt, 4 tablespoons Sassolino. RECIPE VERY SIMPLE AND VERY GOOD. Put the milk, rice and vanilla bean in a saucepan and bring to a boil with the zest of a lemon and a pinch of salt. Allow to cool and remove the vanilla bean and lemon rind. Aside mix together with a fork 5 egg yolks, 3 egg whites and sugar until you get a thick cream. Combine the cream with the milk to the rice and mix everything well adding 4 tablespoons Sassolino (anise liqueur). Pour the mixture into an oven high up in a mold and bake for 40 minutes at 200 ° C.
